Chicken Enchiladas with Sour Cream Sauce
Ingredients
- 10 soft taco shells
- 2 cooked, shredded chicken breasts
- 2 cups shredded Monterey Jack cheese
- 3 tbsp butter
- 3 tbsp flour
- 2 cups chicken broth
- 1 cup sour cream
- 1 can red enchilada sauce
- 1 can diced green chiles
Steps
- Preheat oven to 350°
- Grease 9x13" pan
- Mix chicken + 1 cup of cheese in a bowl.
- Place chicken + cheese mix in tortillas, roll up + place in pan.
- In a sauce pan, melt butter, stir in [?] [two lines largely obscured - appears to be: stir in flour, then add broth and whisk]
- Heat over medium heat until thick + bubbly.
- Lower heat[?], stir in sour cream + chiles. Do not boil [partially obscured]
- Pour enchilada sauce over rolled tortillas + [?]

- Bake for 22 mins + then broil for 2-3 [?] brown/crisp cheese [partially obscured]
Notes
- If roux (written 'rue') is too wet (too much broth) add some [?] to get the right consistency. If roux is too dry, add [more] broth.
