Chicken Enchiladas with Sour Cream Sauce

Ingredients

  • 10 soft taco shells
  • 2 cooked, shredded chicken breasts
  • 2 cups shredded Monterey Jack cheese
  • 3 tbsp butter
  • 3 tbsp flour
  • 2 cups chicken broth
  • 1 cup sour cream
  • 1 can red enchilada sauce
  • 1 can diced green chiles

Steps

  1. Preheat oven to 350°
  2. Grease 9x13" pan
  3. Mix chicken + 1 cup of cheese in a bowl.
  4. Place chicken + cheese mix in tortillas, roll up + place in pan.
  5. In a sauce pan, melt butter, stir in [?] [two lines largely obscured - appears to be: stir in flour, then add broth and whisk]
  6. Heat over medium heat until thick + bubbly.
  7. Lower heat[?], stir in sour cream + chiles. Do not boil [partially obscured]
  8. Pour enchilada sauce over rolled tortillas + [?]
  9. [?] sour cream sauce. Top with remaining [?] [partially obscured]
  10. Bake for 22 mins + then broil for 2-3 [?] brown/crisp cheese [partially obscured]

Notes

  • If roux (written 'rue') is too wet (too much broth) add some [?] to get the right consistency. If roux is too dry, add [more] broth. Let pan cool down for a minute before adding the sour cream [line partially obscured]. You think you topped your enchiladas with enough cheese? Add more! Everything is better with [?]
